I never had that problem with my epoxy, but you could let it set a little before putting it on. This will likely give you a thicker epoxy layer in those areas but you'll know it's covered. I found that generally, when I started at the middle of the boat and worked towards the ends, the epoxy was just starting to kick by the time I got there (NorthBay) so it was a little less likely to drip.
