Don't know the answer to this one, Mac. An e-mail to Harbor sales or Edensaw may get you an answer. The weight difference is significant, particularly in a larger hull.
I also suspect that using fir plywood for the more severe bending in typical kayak construction may lead to some cracked panels, due to the presumably larger number and size of voids in the plies.
