if its dry/not sticky...

if you have reasonable temperatures and you have applied thin coats of varnish...should be good to go within 24/48 hours.

check the can of the manufacturer...they will often give guidance.

you may find that to acheive maximum hardness may take a week or two so be careful about supporting the kayak on relatively freshly varnished (or painted surfaces for that matter) if you do not want to get some form of indentation in the coated surface.

but for the water...when it is dry to the touch plus a little..i think you are good to go.
