I built a 17LY in a 15 ft garage by putting it diagonal. It worked but ws tight.
I also own the Triple. I have no idea whether the changes you seek would work well. I would not compromise design for the sake of building space.
The Triple is huge. If you are bringing kids as passengers, the boat is too big. If you have another adult in the boat, ebverything works well. Call Shearwater Boats and see if their 18 ft Eider Double will accomodate the crew you anticipate bringing.
