If you have completed your epoxy work, you can go with no varnish or paint at all. The varnish serves two purposes - protecting the epoxy from ultra-violet deterioration and cosmetic appearance. The amount of sunlight that you are going to experience in a camping trip is not going to present a UV issue, so pack up and go paddling.
