How many coats of varnish

Going to be doing the seats and thwarts and all for my canoe soon. I have the clear goldspar varnish but I don't have a clue how many coats of it I will need to apply.

Also anyone have any ideas on the best way to set up my pieces? Should I do one side at a time or find a way to hand them so I can do all the sides at once?
