Mill Creek for Mom

My mom has started showing interest in a small kayak for exploring and birding. Her main concern is that she will not be able to lift or carry it.

A Mill Creek 13' seems like a good choice, but I would still like to get the weight down by 5 - 10 lbs. Is this realistic?

Any other suggestions?
