Ya know, if you plan on using a spray skirt all or most of the time, and you use cockpit covers when transporting the boats, it's probably overkill to finish the inside of the boats at all. I just scrape off the epoxy nubbies that might injure the paddler and leave it at that. Some folks paint the inside to make it easier to find things in there. I admire their industry, but not as much as I admire my own laziness.
