Finishing Inside

I am about ready to start varnishing my Mill Creek 16.5 but am puzzled as to what to do with the inside of the kayak. I have re-read the instructions, reviewed the DVD, and checked the technical guides on the web. I am assuming the same level of sanding is required and that I could then choose between paint or varnish. Obviously, its a whole lot harder sanding around knees, the rails for the seats, etc. Any thoughts??
