Flush hatch question

Okay, I've cut the holes for my hatches, and I want flush hatches. I was planning on using Ross Leidy's method but now I realize I can't do that since I have already installed my deck. How do the flush hatch kits normally build up a lip? i was going to use fiberglass, but should I just go ahead and do it with a couple layers of ply?
