The behavior you describe (of the bow starting to submerge while surfing) is called pearling. It can be quick, shallow and benign, or deep and scary. In big waves and shallow water it is possible to dig the bow into the bottom -- no fun at all --

Now, in whitewater, sticking your bow into a wave is the first step into the world 'playboating'.
