How long have you got? When you sand the epoxy coat prepping for the varnish, or paint, you want to get an overall smooth finish. You will be able to see the "low" spots or dimples. They will be shiny while the rest of the surface is dull.
When it comes to sanding between varnish coats, I had the best luck with wet 400 grit paper, and an occasional swipe with the 3M pad.
You'll be able to tell when it's enough. At some point, you'll stand back and say to yourself, "That's enough!"
