CLC used to sell their kits without the glassed decks but I believe they had a few problems with customers cracking the rear decks during rescues and rough use.
I have entire wooden boats without FG cloth top or bottom, no problems. However, I now go with CLC's glassing top and bottom scheme. I do use 4oz rather than the regular 6oz cloth, but I paddle from sandy beaches and only weigh 135#. Bow and stern along the keel gets an 18" FG tape reinforcement/rub strip.
Your decision should be based upon worst case scenario strength needs. Epoxy economy is the main key to keeping weight down.
