How smooth is too smooth?

I was into Advanced Autoparts yeasterday and noticed they had 1000 and 15000 grit sand paper. Would it make the finish of my hull look better if I sanded down to that grit between coats of brightside paint?

Would it move better in the water or would it just cause problems with the paint sticking (going to use a sprayer btw)
